Holly’s Curried Chicken Salad

  • 1 lb. boneless chicken breast
  • 1 TB salt
  • 2 TB curry powder*
  • ½ tsp. cumin
  • ½ tsp. granulated garlic
  • ½ tsp. granulated onion
  • ½ tsp. ground ginger
  • 1 rib celery, diced
  • ½ small red onion, diced
  • 5 sprigs Italian Parsley, chopped
  • 3 TB Major Grey Chutney

Poach chicken breast in water with curry powder and remove from poaching liquid when done. Chill, dice chicken and blend with remaining ingredients plus additional curry powder to taste. Add cumin, granulated garlic, granulated onion, ground ginger, salt and pepper to taste. Chill well.
