Lemon Mediterranean Pasta Salad

  • 1 lb penne pasta
  • 1 red bell pepper cut in ½” dice
  • 1 green bell pepper cut in ½” dice
  • 1 small red onion cut in ¼” dice
  • 1 bunch green onions chopped fine
  • 4 oz. quartered drained artichokes
  • 2 tsp. fresh garlic, minced
  • 1 lemon, juiced and zested
  • 8 oz. feta cheese, crumbled
  • 1 TB fresh oregano chopped
  • 2 TB fresh basil, chopped
  • 1 TB Za’atar*
  • 1 TB capers
  • ½ cup black olives
  • Pinch red pepper flakes
  • ¼ cup white balsamic vinegar
  • ½ cup extra virgin olive oil

Cook pasta per package directions and mix with remaining ingredients. Blend well and chill
